hatch, new mexico: the chile capitol of the world



almost every restaurant in new mexico will ask you this question: red, green, or christmas? it's a loaded question and a very important one, because, of course, they're referring to what color chile or salsa you'd like. 

if you're a chile lover you must visit the hatch chile festival, held over labor day weekend each year in hatch, new mexico, the chile capitol of the world. it's a two day affair with mariachi bands, salsa cook offs (both red & green), and chile eating contests. you can buy chile cookbooks, salsa, chile flavored whoopie pies, and chiles by the 40 pound bag, which they'll roast for you on the spot. it's quite a sight to see!
